For Carmen, and for you. My Mother, Carmen, grew up with very little just outside the capital of Panama, but you'd never know it by the way she moved through life, especially in the kitchen. She was a master of making magic from whatever she had, turning scarcity into art with a wooden spoon and a quiet kind of grace.

Growing up as her American daughter, I was steeped in her improvisational genius and her deep love for her culture. The kitchen was her stage, and I was her wide-eyed audience. Some of my sweetest memories are of watching her move, barefoot and humming, as the air filled with the warm, ancestral scent of Panamanian women who came before us. And then, there was the bread.

Simple, soulful, and made with love, her fresh bread was the heart of every meal, the unofficial guest at ever table. I fell hard for it. But years later, a hormonal condition and a series of carb-fearing doctors convinced me to walk away from the very thing that fed my spirit. For a long time, I listened. Until I knew better. Now, as a nutritionist (and a rebel carb-lover in recovery), I've come full circle, kneading dough, honoring our roots, and baking bread that's kind to our bodies and true to our joy.
